The first smell of the Trappist Italian was a little disgusting. The second was gorgeous. How is that possible?

It is a perfect example of the benign wine funk associated with acetobacter. In addition to this chemical imprint there are loads of thick, sweet sensations reminiscent of August and honey and hay. Someone enjoying this wine will sense the VA less prominently as the encompassing imagery of abundance grows in detail and dimension.

The Riesling was as expected, very tart, mostly dry. Refreshing.
